Skirlie is a lovely traditional Scottish dish. Serve hot to accompany meats or haggis, or use as a stuffing for roasts.
50g butter or dripping
1 onion, chopped
100g coarse oatmeal
salt and pepper to taste
Prep: 5 mins Cook: 10 mins
- Melt the butter or dripping in a frying pan.
- Add the onion and cook until slightly browned and soft.
- Add the oatmeal a bit at a time, stirring until all the fat is absorbed.
This is now ready to serve or use as stuffing.
